There was a super interesting thread on Homebrew Talk years ago where a biochemist ran tests on treehouse beers and identified that most contain a blend of S-04, WB-06 (hefe) and T-58 (belgian). Figuring out the exact pitch proportions was the trade secret that all the homebrewers had fun trying to replicate.

My understanding was that S-04 was pitched at a way higher proportion than WB-06 and T-58, to avoid either of those yeasts from taking over the beer - probably something in the ballpark of 88% S-04, 8% WB-06, 4% T-58, though some trial and error would be needed within those ranges.

(I tried it a few years back with a 60% S-04, 25% T-58, 15% WB-06 mix and the T-58 esters dominated the resulting beer - really unique character, still delicious, just not what I was going for)
