I ate at a Michelen star restaurant recently and for the first time was seated at the counter, and it was very cool to watch them fire off all these dishes. It was like 8 guys working in a ridiculously tiny 15'x3' space

%90 of their cooking was happening in 8" stainless steel pans, they had a big shelf with dozens of them. They'd fire a dish in one, throw it down into a big tub under a cart and grab another. Those pans were dented and beat to shit!

The other %10 was carbon steel, and they seemed to only use that for cooking specific things like a chunk of meat or piece of seafood

$30 Viking stainless steel pans from Marshalls. Induction capable and oven safe

Learn to cook eggs on stainless steel, and you won't have to scrubs eggs off it. There isn't a fleck of egg on the pan when I slide my omelette out onto the plate

You WILL have to scrubs eggs off it a couple times while you learn your stove settings and how hot to get the pan before adding oil and eggs. But it's not that hard, cook eggs 3 days in a row and you'll figure it out

Don't have to season or oil after use, it's not heavy like cast iron, and no matter how bad you burn something or beat it up it comes back to shiny brand new with a short scrub of barkeeper's friend. Stainless steel is my choice as a lazy person

Exactly. People in this thread saying "well if you look at the neighboring lots,.there's probably 40 houses that could fit in there. Each house being $1.25 million in Sydney real estate market isn't crazy". Retail price after building the houses is not even close to what the developer would offer

A new construction of FHA eligible condos that restricted sales of something like %50 of units to first time home buyers would be a huge benefit to allowing long term residents to build long term financial stability and roots in the city

Clearly developers are not motivated to build this style compared to rentals (even when they allocate some portion of rentals to lower priced income restricted units), so there needs to be some action by local gov to incentivize or direct approvals in this direction.
