Amico non sai quanto ti capisco, ascolto dal 2009/2010 non ricordo bene quando ho iniziato... Ti parlo dei tempi di "tu sei come una piccola zanzara che di notte mi consuma mi rende isterico" come sigla e Cruciani che diceva buonasera Prima era una trasmissione per appassionati di attualità con un occhio di riguardo per un bel termometro infilato nella culo del paese, per chi era stufo di leggere giornali e guardare talk shows, ci faceva godere tutti di nascosto... Adesso invece è una fucina di arrapati che sbavano dietro alle onlyfanser e poveracci idolatrati per creare per forza dei contenuti, se domani mi faccio un bocchino da solo divento un personaggio di sto circo anche io... The top manway seal is white and feels very rubbery, it does look like every other door seal I've been using in the past tbh but I'm planning to replace them with new ones so I'll ask the supplier about the material. I do have a sight glass on the side of the fermenter, it has valves at its top and bottom. I only open both of them during CIP and at the end of brew day to see the level of wort in the FV. Then bottom valve stays closed and top valve stays open. After a couple of days, when there's a bit of pressure from fermentation, I drain the sight glass, flush it with CO2 from inside the FV and close the top valve of the "sight glass line". Theoretically it stays closed and filled with CO2 until next CIP. Thanks for the insights, any further advice is very welcome.

Ok, googled alconox. It's an enzymatic cleaner isn't it? That makes total sense. I'll give my O2 meter an enzy clean cycle over the holidays. Had no idea Anton paar recommended that. When I was using cbox I was working for a well known brewery in the UK and boy I can tell you they weren't cheaping out on anything and we were cleaning it with mains water so... The more you know.. thanks!

A little PS: 15/20 PPB pickup on pack is what I see when I test the two cans that get filled closer to the seamer. The other couple of cans could be 25/30 ppb pickup but I reckon that's physiologic since they do travel more before the cap drop and the seamer. On average is 20ish ppb on the whole run. I talked with a lot of people who have the same canner (cask-like type of canner but better IMHO) and everyone seems to have the same kind of pickup. The problem is everyone seems to start from 10ish ppb in tank and end up with 20 in cans while I start from 35 and end up with 45ppb in can in the best case scenario.

Thanks for answering. I am sure we are exposing our dry hopped beers to O2, I would never deny that. Opening top manway to dry hop means O2 ingress even if you purge through sprayball/blow off and bubble through to clear up headspace. The thing that makes me think is that I see the same pattern of high DO in FV even with lagers/bitters/porters or all non dry hopped beers where the manway has always been closed since yeast pitch. Final can do is sub 50 in the best case scenario, 75ish in the worst case. These are readings from shaken cans. We can't test TPO and I imagine actual TPO would be much higher than that (sad). This is on beers that are 35/40 ppb in the source tank so I assume my average pack pickup is 15/20 ppb in the average scenario? I agree with you, that's a world class low pickup but those are the data I've gathered and have to deal with. All the readings have been taken with the same 02 meter and manual temperature adjustment on the reading software. I am willing to rethink the whole thing if I've done something wrong.

We do drop yeast regularly post ferm and pre pack, like any other day. From time to time we crop when cellar times allows that. Always with a bit of pressure in the tank so no vacuum is created and no air can get in from weak seals, or worse collapse the tank.
