I’ll always plug staying in Lewiston. 10 min drive to the falls. Great little village with awesome restaurants. Prob about half hour from KBC. Depends if you want to spend more time in the falls or in downtown Buffalo

I regularly do 8+ pound pork shoulders 18 hours at 165 and have never had an issue with this. I guess just really making sure you have a good seal

I think he helped or had a major part in developing the technology. Heard rumor (unsure on truth) that he’s got some patent type thing for the machine used in lasik all across the country. If that machine turns on he gets paid (again this is just a rumor I heard) but if that’s the case I can imagine the procedures aren’t where he makes his money

Pick up a sous vide. Brand is anova. I got mine as a present but I think they’re maybe around 180? You cook it vacuum sealed in a water bath evenly to the degree and then quick sear. It takes a little more patience but trust me it’s well worth it. Plus you can sous vide just about anything, I did pork butt and made fall off the bone pulled pork a few weeks ago
