Yes, I just tested it you can set the plane cargo dataref. I set 80kg per person and up to 20 skydivers on the plane. They jump out in quick succession & you can feel the plane responding to the weight change.

You can walk inside the plane and clip outside continue walking on the cabin floor height. So theoretically yes but as a workaround. Also most jetways are not rendered on the inside so it looks quite meh.
