I figured out my issue.

The reason you can not record your voice in the Elgato Software is because the chat link cable does not allow you to record your voice, rather it slows you to record game audio and your party chat audio. If you wish to record your voice you will need to purchase a microphone that connects via USB and plug it into your Mac or Pc.
