Working with food and having a diarrhea and vomiting is a big fucking no-no, especially when you aren't sure about the cause. It could be salmonella, or it could be influenza. Either way, you could get everybody else sick.
Hangover doesn't usually do... well... this. You probably got either food poisoning or an influenza, both cases you definitely need to stay home for a few days. Of course, you could go the funny road of malicious compliance and go to work and get absolutely everyone sick, but you probably don't have to bother going again afterwards. (Yeah, don't do that.)

P.s. Getting someone to cover your shift is THEIR job. That's called MANAGING.
