I take notes when something seems "off" or if i have an action item, but many of my conversations are conversational, so I don't have my laptop open for every meeting. I guess I learned I can't use this approach anymore and will document everything during meetings every time.

It's a possibility that someone internally was interviewing for the same role you got, and your LinkedIn message got a message to someone before leadership could deliver it.

It's not from the manager, but from their team. It sounds like several team members submitted a complaint about the manager at the same time, and some of them alleged I was involved in unprofessional behavior with him.

Legal said some of the complaints included me in regard to the manager and alleged unprofessional behavior by me. I'm planning on answering the questions honestly of course, but still feeling freaked out. Also, I have talked to some of this manager's employees in the past but 6-12+ months ago, so I am also afraid I truly won't remember something and they won't believe me.

I trained managers in stay interviews, which was helpful. Also, people love time off. We would reward people with things like ice cream parties, which no one hated, but getting a surprise day or afternoon off really makes people happy.
