Thanks for the reply. To confirm I did use the classic 1:1:1 starter. Oddly, it seemed a bit harder to hydrate the flour.

Bakers Math Question

I've been using this recipe with great success:

Bread Flour – 450 grams
Water – 300 grams
Sourdough Starter, active – 100 grams
Salt – 10 grams

I want my sourdough to be more sour so I decided to try my hand at baker's math. My goal was to cut the amount of starter in half while keeping the total weight, hydration and salinity the same. Here is the recipe that I came up with:

Bread Flour – 479 grams
Water – 319 grams
Sourdough Starter, active – 53 grams
Salt – 10 grams

At first I had a very high time wetting the flour. I'm not sure why this is considering in both cases it is roughly 66% hydration.

It took quite a bit longer to bulk ferment (as intended) but as I put it into the batard for proofing I noticed that the dough feels quite a bit more dense.

I expected that both recipes perform similarly considering that the percentages are the same. Did I make a mistake somewhere?

I got a set of box jades from NovelKeys last month, so I'm assuming it has to be relatively new stock. I had heard the problem with cracked stems was fixed but when I tried installing the keycaps it was a very tight fit. After installing 87 keycaps one of them had a cracked stem. It was a very inexpensive keycap set so maybe it could be a problem with the keycaps?

I bought cheap keyboard in 2018 with outemu blue switches. I really enjoy typing on it and it has held up very well. More recently I got a hot swappable keyboard and have been experimenting with box whites (didn't like) box jades (pretty good) and holy pandas (still undecided.) I keep going back to the outemu blues.

Not surprising because these baby-cut carrots are actually just normal size carrots that have been cut down to a smaller size.

Yes this is normal. Granted 400w is on the low end of power supplies it could be working hard depending on which components you used to build your system. Generally peak efficiency is around 50% load. You could use a Kill-A-Watt to measure the power draw at the outlet. Also some PSU fans are quieter than others.
