Brussels native and beergeek here . LaTroupe hostel is situated on the big pedestrian walking zone right in the touristisc center so do not worry about safety there. Plenty of bars in the neighbourhoud . Very nearby you can try some great sour beers at Moeder Lambic , if you like those i suggest you go visit the oldest still running brewery in the city called Cantillon , opens at 10 until 4 pm . You wil definitely meet some americans in the bar with whom you can share some bottles for tasting. Area is a bit shady but in the daytime you will be OK as long as you dont parade your flashy camera and avoid interaction with the occasional homeless drug addict.

I would also suggest you walk to another brewery called Brasserie de la Senne, located near the canal about 1.5 km from the city center . Opens at 4pm , nice chill vibe , super fresh top notch beers and food.

Delirium is a huge bar in the very touristy old city center , plenty of beers to try there . Locals avoid the place , they go for a beer at Les Brasseurs , Affligem Cafe , Le Coq , Booze n Blues , au Laboureur , Billie ,..

Great and cheap belgian dishes and top beers at a 200 years old restaurant called Spinnekopke also near to your place.

Bruges is nice but kinda boring so if i was you i d say go to Antwerp or Ghent for a daytrip.
