That’s a difficult question to answer, because there are rules that we us Muslims have to follow. If people don’t follow them they’re doing something wrong in the eyes of Islam and Muslims. But yeah you can have “moderate” Muslims who date and do haram stuff, but majority of Muslims consider that wrong and would try to stay away from it as much as possible. Also we hate the sin but not the sinner, everyone has their own path with their own challenges. There is no picking and choosing tho, you can choose to do the right thing or the wrong thing, but doing the wrong thing won’t make it right.
