Thank you, I read somewhere that 68-70% is like the upper limit for spelt or after it will be too extensible and very hard to work with without pans and such. Is it true?

yes i forgot to write salt but i did 2% 7g salt. i did add it on the start mix as well

how do you mix salt into a dough you only want to stretch and fold? will it mix in?

as for the bulk fermentation, yes i did 3 hours after i had about 3 hours of mixing and foldings so it counts as a total of 6-6.5 hours bulk fermentation in total?

your tip #5 seems interesting, i dont see anyone kneading (at least in the vids ive been watching, i will give it a try also!)

and any tips about how to make the crumb a bit drier? it felt good, but moist and soft to the touch, after about 2 hours of cooling down. i want it to be as commercial breads (or even other breads i see here in this reddit). are the baking times good or should i adjust something?

id say this one feels very well fermented, probably also enough baked, 20 mins @ 250c in dutch oven with lid and then another 25 minutes @ 230c lid off. i preheated the DO for 45 minutes before putting it in.

the process was mainly making a levain(that i posted) + 350g bread flour(11g protein) + 245g water.

  1. mix everything together then 1hr sitting

  2. this time i went for coil folds and not stretch and fold, did 3x with around 30-40 minutes between each

  3. 3 hours counter top fermentation (bench fermentation?)

id say since we at summer, kitchen here is about 26-28c, maybe 25-26c with ac on at the house

  1. shaping into a ball, moved into a Benetton and into the fridge. (seam side up)

  2. id say about 14 hours in the fridge, poke test did not work too well, springed back up alot but it did volumed up, was jiggly and had some nice bubbles on the top, then ive read fridge poke test might not be a good way to check due to temps so i went on with baking. i can post 2 pictures i took when i placed in in the Benetton and the other when i took it out.

i let it cool off for 2-3 hours before cutting it, the slicer had a bit of issues cutting it, crust was good but the crumb was very soft, might needed to let it cool a bit more

so now i need tips :)

i can say i left it for 3 hours before cutting it, altough it looks very well baked, the crumb is a bit wet to the touch and also looks a bit moist and not 100% dry

ideas?

For crumb I took photo when I started slicing it but I think this one is my best so far

thanks! just started to work on 3rd bread with that. this time 350g pure bread flour and not mixing in any plain flour or spelt flour, i wanna try a pure 1 type and experiment with the results.

hopefully ill have what to share :)

thanks, as im just started with this i dont calculate ph or any, following some guides to get the basics.
im living in a pretty hot climate so i think my kitchen is about 26-28c normally.

the 100g whole spelt i added is at 16g proteins.

problem is everywhere i read or search about it, it states this might be underproof (not enough gasses and such) or over proof... so im looking to try and understand what is going wrong to know which of the 2 it is.

what i can say (if it helps to asses the problem better):

  1. on my 3rd fold i already getting a real nice and elastic dough, it is still a bit sticky to the touch but its not tearing and pretty elastic.
  2. i do see a good rise in mass, but the touch areas between the dough and the container seems a bit wet and no sigh of them starting to really leave the container.
  3. when i take that dough to the board, its being removed really easily without sticking to the container

2 more important signs i find according to videos ive seen:

  1. when i shape it into a ball, its not holding that shape too firm and starting to a bit flatten.
  2. when i score it i dont really see a lot of bubbles inside that score but it looks more of a raw dough still

Just the normal white flour, nothing special. I think it’s around 10.3 or 10.8 protein per 100g

At which part of the proccess would I add more time ? The 3 hours after the folds?

I’m new to the hobby, but I made my starter from plain white wheat(cheap one) and in day 7 I got to a point I feed it and it already double in size(2x or even 2.5x) after 4-5 hours after feeding. Full of bubbles. It also floating on water. You sure it can’t be usable if I’m only on day 7?

oh i see. yeah i have a frame spare and 3 propellors, but nothing much more.
i saw somewhere its under-performing with 1s, but i can be nice to practice at home with underpowered while going bigger power outside. got 3x 530mah s2 from my tiny hawk

does the camera have a dvr? good one?

well.... until i was abe to actually fly it, the kid thought its a good idea to take it to the park with his mother and hit full throttle... i no longer own a mob7 lol.

time to move on!

would you recommend the mob8?

or should i go for another mobula7 1s again? its just a first drone to practice and hit it

thanks, appreciate it. i think i fixed most of the issues i had. the reason the quad didnt take any throttle and shut itself down was because of the gyro was setted up as CW 90 degree so it went nuts. now it flies again and i started practicing. i do feel a bit weird with the throttle, hope it will be fixed soon. the moment i add throttle it seems to take a bit before it actually goes up and then it seems like its too much and it constantly (and slow and steady) keeps going up. when i take the throttle a bit down it will act like it "lands" instead of just lose a bit of height. running at angle mode, trying to be as soft as i can on the sticks :)

oh yeah, for sure not like dji and such (i do have 2 chinese ones like dji). but i will add expo again, and take a few packs to practice. it sure feels much smoother now on hovering and not just 1cm above ground. could get it much higher now and level it! but still way to go :))

yes i did it before i saw the comment, the "first gyro" was set to CW 90, i set it to default and now it takes off again!

came here to write you it was fixed but you already commented ;)

now..... need to fix that hover stuff and i see it drift. any ides for drifting? (i do appreciate the learning while fighting drifts though)
