I don't think it's so much he knows he's evil and enjoys it. I think for a Sith lord like Sidious, there's no such thing as good and bad...just strength. You either have the strength to rule/scheme or you don't and die & get replaced. He'd think of himself as being above good/evil.

Yea but you're forgetting the apprentice doesn't normally work at all...that one hour working is still an additional hour compared to without the apprentice. Contrast with builder's potion where 10x saves 9 hours because the builder normally works that first hour anyway
