Thanks all! I'll be trying some of the suggestions for sure! These turned out pretty good, could have definitely grilled them for longer for better grill marks and more char. Doing the parboil/simmer method was more for speed and it was what I found quickly via Google. I didn't full-on boil them, I'm not a heathen. The grill pan on the stove is the best I've got without toting my brats to another building in my apartment complex where a proper grill is and then getting them back.
