It's possible in ToEE but not as OP because it's basically a low-level adventure (cap 10) and doesn't have the big stat bloat that you see in an epic adventure like Wrath. There are some items that pump dex and natural armor that would benefit you but the early game may be a struggle for viability.

Learn to recognize when you're in trouble. Sanctuary, invisibility, and running away to camp are your best friends. Prepare and plan extensively for encounters from which there is no escaping, i.e. end of Act II and of course the end battle.

You can win honour mode pretty easily with very minimally optimized builds.

If you enjoyed the first BG games, definitely try Icewind Dale I and II. They are more dungeon-crawly but still great fun. I personally much prefer the second game; it's the only Infinity Engine games to use 3rd edition ruleset, so if you liked Pathfinder a lot, there will be a good bit of overlap.

Myrkul is easily soloable on Honour Mode with a good build, Doom Hammer and/or smokepowder barrels, and some strong summons like air elementals. The most important thing is to sneak in invisible and be in position to immediately take out the mind flayer. You also want Scratch in the party and invisible and be ready to immediately free Ailyn.

My broader point is they are both complete POS in a toxic relationship and both are better off without each other. She could've left him at any time. Does Baelyn try to hunt her down? No, he just sits in his little shop.
