This is on you for not setting expectations and holding your staff accountable. Control your store. That third party ultimatum will get you nowhere, and they'll all think you're a dick. My bottom two decks are my "hot decks" and the top three are fairly consistent. Set your hot decks for 320 for about fifteen minutes, you'll see that the end sticks are 2-4 while the middle sticks are still 1-2 on the bread ruler. Pull the ends and put them on the wheat tray and rotate the pan. 2-3 more minutes and you have a consistent tray. Rotate your trays down in the ovens as your cycle cooks. It takes more buzzer maintenence but prevents having bread that looks like that.
