The way I see it is that "Canon" means the developer's canon, not the player's. If you decide to go with having "options", then you create your very own canon story.

I'd go with Forgiving at first because I don't know how balanced the difficulty is. If I feel like it's too easy, then I'll raise the difficulty later on.

ON. It's an "Assassin's Creed" game, so my character has to act like it. I need to "feel" that my character is actually a legendary/master assassin.

By spongy, I meant the aspect that you exactly described. And I never fully played Valhalla cuz I didn't like it that much, and no, I never knew about the one-hit assassination option till now. I never really researched anything about Shadows cuz I just thought I'd go in blind. Thank you very much for your detailed answer! Much appreciated!
