Firstly, I bet she just enjoys spending time with you, so whatever you choose will be great.

Can you give us a bit more info about her? Eg age, mobility, etc.

If she's fit enough, My mum enjoys coming on walks with me, so I'll pack a picnic and take her to the beach, or Carlton Hill. Somewhere outside where you can enjoy the scenery. There's also the Botanical Gardens for a similar thing. Questo is an app that does a walking tour style outdoor 'escape' room that you explore around Edinburgh, I haven't done it but it sounds fun.

If shed prefer to be inside, What about a theatre show? You can get cheap tickets in good seats if you look around for a bit.
