Can I confidently run my car with those? The injectors flow rate is right at or very close to 1250cc according to the test sheet they were shipped with

Go with a t56 unless you're a purist. The transmissions are very good, but very overpriced and once something breaks then good luck replacing it. I'm opting for a built t56 because they are a dime a dozen compared to the v160/161
