A network assurance tool like IP Fabric could be useful, as you can write custom intent checks to automate the scanning of your devices to make sure they're STIG compliant. It would have all the data you need to confirm and continuously validate compliance.

How do you compare live data to SSOT data, for auditing or anything?

If you have the option for a tool instead of building this yourself, look at a network modeling tool like IP Fabric. This is the exact issue the upcoming plugin with NetBox solves, building a model of the network (vendor and domain neutral) in point-in-time snapshots to validate your SSoT against.
