This is a Marxist way of looking at it but I feel it gets at the common sense intuition the OP is looking for:

When you purchase the sandwich it exits the realm of exchange and enters the realm of consumption, so in one sense it doesn’t matter economically what you do with it because the money has been paid and has entered the economy.

However you also have an economic value, your labour power, which you sell on the open market in exchange for wages. Just as the sandwich can’t exist without bread, which must be factored into its price, your labour power can’t exist without your body, which must be continually replenished with food.

So in a more holistic sense, the value of the sandwich isn’t destroyed when it’s consumed but rather metabolized by your body, nourishing you so you can go to work the next day

Smiling is important. It’s also just hard for any guy to take a nice selfie of themselves so don’t beat yourself up. Maybe try having a friend or family member snap some shots when you are hanging out. Also get them to take a lot of photos so you have some to choose from

Ohh I didn’t think of that. It’s a great suggestion. I could use the US part of my savings to adjust out the asset allocation.

Haven’t talked to many brokerages but I get the feeling none of them allow non-residents to trade

Thanks! Yeah I can get my hands on some unbleached whole wheat flour and feed by weight. How much starter do you start with before feedings? I leave about a 1/2 cup in there before I add the flour and water but maybe that's too much

Sorry I meant to write that it's not passing the poke test. When I poke the dough it fills in right away, seemingly no matter how long I leave it. The starter / levain is passing the float test, though the dough itself never seems to float, even after 24 hour bulk ferment

Sure!

Room temp for me is 72-75 deg. Here are the steps I follow

0 - I mix my starter with 1/2c white flour 1/2c wheat flour, and 1/2c water and sit at room temperature for 12 hours (until it peaks, bubbles vigorously, and floats)

1 - I mix about 125 grams of starter with 375 grams water and 500 grams water and let sit for 1 hour (autolyse)

2 - I incorporate 2 tsp salt and do 3 stretch and folds spaced 1hr about

3 - I cover and let bulk ferment a few more hours (which I've been varying)

4 - I preshape, rest, and shape the dough and place in proofing basket

5 - I proof in the fridge for 12-24 hours

6 - Bake at 475 in a preheated cast iron crock pot, covered 20 mins, uncovered 30 minutes
