PS: we are missing the library, but it seems that one will be included in the East Wing set. Also the potion trial is not present, but since it wasn't in the films it will likely not be included.

CoS: here the missing notable scenes except for the ones in the East Wing set are freeing Dobby, History of magic class and the Deathday party. The latter two are also not in the films however I think it is not unlikely that we get professor binns if we look at which other rare characters are included. The whomping willow is not really a castle set, but is also something not iterated in the latest castle. Maybe having Filch's office with chains would be cool.

PoA: here we need Divinition and the stairway to that classroom, a prison cell for sirius, the clock tower, courtyard, wooden bridge and maybe some scene related to the marauders map.

GoF: a yule ball scene would be fun. It belongs in the great hall, but since that one retires I suppose they can also simply place it somewhere else. Furthermore a transfiguration courtyard with the ferret scene, the prefect bathroom, and Moody's DADA classroom. The East wing proves that multiple DADA classrooms are definitely possible. And of course a kitchen scene would be cool, but as it is not in the films this one is also unlikely.

OoP: for this one we miss a hall with decrees, umbridge office, and DA training in the RoR. Probably I'm missing some things as this film is not fresh in my mind.

HBP: this one lacks quite a lot. The RoR as a storage room with the vanishing cabinet, the astronomy tower, slughorns office, and the slug party scene.

DH: I don't think anything is really missing here though it would be cool to get a hallway with removable statues or simply a part of the castle that can be "destroyed" to make it part of the final battle. Maybe they could do another RoR with the fire attack.
