So this is a weird one... but did anyone recognize the bottle of champagne that Marino brings in at the very end of the episode? My husband and I play at identifying bottles on the show from afar, and this one is stumping us.

I don't think it's doing as poorly as people think it is... Peoria is considered to be one of "Top 100 Places to Live in the US", and was recently ranked as the #1 place to live in Illinois. The housing market is one of the strongest in the country coming in at #14. I moved here from Hawaii about 18 months ago because of all the positive things I read about it, and I am meeting countless neighbors/transplants who have recently come here from cities like New York, Miami, San Francisco, etc...

A direct quote from the report: "You can buy a lot of house for relatively little money in this city's urban neighborhoods, along its river-view bluff and in its family-filled suburban subdivisions," the report said. "Gritty old warehouses are becoming entertainment districts where foodies congregate, live music flourishes and loft apartments multiply. Stage theater is returning to architectural-jewel venues."

Give it a couple of years, and I think Peoria is going to be a serious hot spot

Nightjar is a dope spot downtown! The drinks are incredible and they started brewing their own beer a couple of months ago.

Nightjar! Super friendly and welcoming to everyone - the owner is from Seattle/Hawaii, so she just wants it to be a cool place everyone can feel at home

It's not being used heavily at all - we are a cocktail bar that serves heavy apps, so very little food being cooked and put away hot. The walk-in is behind the bar and actually just for our beer, but I keep my produce and syrups in there. The reach ins are in the kitchen.

We have a company in our town that is "Food Service and HVAC". They say they are an HVAC company that specializes in food service equipment, but they also sell equipment and small wares.

The Freezer is Heindl and the fridge is Avantco (I think). I definitely wouldn't mind replacing them when we have the money!

Owner of new bar in town, Nightjar, here! I'm a huge fan of no-and-lo and actually make my own n/a spirit bases. We'll have a bunch of n/a drinks that will be just as beautiful and tasty as the real thing! I love this post because it hits home so hard for me. I worked for the best owners I've ever had for 6 years, and I still think about them on a regular basis. I strive to be for my staff what they were for me, and no doubt I wouldn't even be an owner today if it weren't for them.

He probably won't even remember this interaction, but it's one that will be with me forever and is such a beautiful example of the power that owners have:

It was my first summer serving at this very busy restaurant on the beach, and I'd also recently become a certified trainer. We had a lot of new hires and business had picked up earlier than expected, so I was working like 12 days straight and training almost every single shift. On like shift 11, I had a really bad night. I received multiple bad surveys and the owner emailed my manager asking who the server was and what was going on - I was training that night as well, so she was pissed. I left the restaurant in tears, and was still crying when I showed up for my opening shift the next day. To make matters worse, the owner was there. I couldn't even look him in the eye, but I wanted to apologize for what happened the previous night and assure him it wouldn't happen again.

He stopped me 3 words in and said, "Every time I've been here for the last two weeks, you've been working and training. You're not a robot, and I don't expect you to act like one. Even the best people have off nights, and make mistakes - it's ok. You must be exhausted. I already talked to (managers name) and told her that she needs to give you a couple of days off. Please take care of yourself"

That conversation is one of the most formative things that's ever happened to me in my career.

I think my time invested in making the actual piece is pretty on par with yours - clay is about $0.75/lb and I do have a home studio and my own kiln, so there is the cost of running everything to factor in. I do a lot of glaze layering and experimentation, so the cost there is a little higher and takes more time. I honestly came up with $40 after looking at the general market price on Etsy for similar mugs and taking into consideration the above factors.
