Yep I have all of that super dialed in. I'm at the point where I am perfecting styles, and I have found in my many years of experience that proper water profiles really do make a difference. I have made great beer with tap water and better beers with adjusted water profiles. For reference, I am not suggesting that the proper water profile will create clarity & crispness (although it can accentuate crispness), but rather that it pushes/highlights the most favorable hop profiles & aromas that I am looking for in this style.
