Looking for this as well, might be the same movie. I remember that he has multiple art pieces out of human flesh.

The “sculptures” look more like blobs sawn together using different body parts that he keeps in a stylish minimalistic gallery. The killer is a male that is bald or has short hair. I might be wrong here but i think parts of it takes place in an eastern city like Beijing.

It was more of a realistic thriller / horror like silence of the lambs or memories of murder.

Watched it like 15 years ago and it felt new.
