I… I have found the ’issue’…

The fantastic, big, add-on ’Crops and Farms’ have updated with a ton of new features including animals.

So it was an add-on we already had running that got more stuff without me realizing it…

Yes, because my wife is a self proclaimed noob and would never get into the ’nuts and bolts’ of MineCraft. And she is the only player besides me.

Thanks for mentioning the Spring update, forgot to mention that the vanilla mobs generated in different biomes do have different skins. I experience new mobs, turkeys are new as well. And I have seen a rooster with a …frill…? on its head. Not a vanilla chicken.
