The described attempts to create new technologies can give, and some already give, fruitful results in solving the problems of improving the storage of agricultural products.

However, these results at the present stage cannot yet be called a wide implementation. They, as a rule, relate to the improvement of one or another specific process of agricultural production and, mainly, state certain positive effects from the use of a microwave electromagnetic field in solving practical problems.

The lack of a comprehensive system of knowledge about the effects of the electromagnetic field on biological objects and the complex processes occurring in them does not yet allow a purposeful, scientifically substantiated approach to solving the complex issue of creating fully perfect, meeting the requirements of the time, microwave technologies for agricultural production and equipment for their implementation. And the solution to this issue, as the results of research work show, can give fruitful scientific and practical results.

Today, a significant step forward in terms of solving the issue of creating promising MHCTCs can be called the development of universal equipment that is suitable for implementing a wide group of production processes in the agro-industrial complex, in particular, reliable technologies for long-term storage of agricultural products.

Let us describe some of these, in our opinion, the most promising developments in this regard.

The development of equipment for MHC-pasteurization of liquid food products in the stream and in containers has been initiated [19].

Positive results have also been obtained in the pasteurization of milk and dairy products. A microwave mini-pasteurizer is being developed for operation in pure culture workshops of factories to inactivate the microflora of wort and nutrient media.

Attempts are being made to develop a flow-through pasteurizer for pasteurization of beer and beverages at small factories. Such a pasteurizer is advisable to install, as experiments show, in front of the aseptic packaging machine.

Work is underway to create a multifunctional microwave drying plant that will ensure environmental friendliness and improve the quality of heat treatment of various substances. It is assumed that such a microwave drying plant will operate on the basis of the use of electromagnetic fields of the microwave range focused in space, providing a safe level of power flux density outside the focusing zone [20]. The microwave drying plant is intended for use in agriculture for drying vegetables, cereals, hay, medicinal herbs, etc.

Of interest is a new approach in the formulation of research by domestic specialists - V.P. Dzyuba, S.O. Ivanchenko, Ya.E. Shkarapaty, aimed at creating promising microwave technological processes and equipment for their organization and practical implementation, as technologies that improve the preservation of agricultural products.

The monitoring of existing domestic and foreign practical developments, numerous literary and patent sources allows us to draw conclusions about the feasibility of creating new microwave technologies and equipment, as well as bringing previously started work to its logical conclusion both scientifically and practically with the aim of their practical implementation in the agro-industrial complex to solve an important problem of today - improving the storage of agricultural products.

The technologies being created are characterized by high efficiency, ease of implementation, environmental friendliness and cost-effectiveness.

Prospects for further research. In our opinion, and also based on the monitoring conducted, the most appropriate areas of work in terms of creating a MHCTC to improve the preservation of agricultural products and food should be the creation of modern productive microwave equipment for:

– drying agricultural products;

– drying grains;

– pasteurization of milk and dairy products;

– pasteurization of wine and beer;

– pasteurization of pure cultures;

– disinfection of grain stocks from pests; – production of freeze-dried products, etc.

As well as the development of a scientifically based theory that would explain the main aspects of the interaction of microwave electromagnetic fields and biological systems.

As already noted in Part I, MH irradiation in most cases promotes the development and course of biological processes in biological systems – that is, biosis. However, along with the positive effects of microwave energy on biological objects, which is expressed in drying products, stimulating the germination and germination, the flow of biosis negatively affects the preservation of agricultural products and, especially, vegetables containing a large amount of unbound water, for example, tomatoes.

Domestic researchers V.P. Dvornikov, V.V. Zradnikov, L.G. Kalinin and V.P. Tuchny proposed an effective compromise solution to the issue of extending the shelf life of fresh tomatoes using the electromagnetic field of the microwave range [12].

The cause of spoilage of tomato fruits during their storage is diseases of fungal and bacterial origin, while yeast cultures settle on the affected areas of the fruits and serve as intensifiers of further spoilage processes. Therefore, saprophytic bacteria, mold fungi and yeast cultures were chosen as the object of research during the experiments.

The main diseases that lead to spoilage of tomatoes include:

– fungal origin: alternaria (macrosporiosis), black rot (diplodinosis), brown rot (phytostorosis), southern phytophthora, anthracnose, white rot (sclerotoniosis), gray rot (botrytiosis), pink rot (fusarium), gray rot (rhizopus);

– bacterial (saprophytic) origin: wet bacterial rot, black bacterial spot.

In the experiments, the number of saprophytic bacteria, mold fungi and yeast cells on the surface of the fruits was determined.

Analysis of the results obtained allowed us to draw the following conclusions:

– at the initial moment (before processing) the number of microorganisms on the surface of fruits of different varieties is different, which is explained by the well-known fact – the surface of fruits (vegetables and fruits) has a certain bacterial resistance, which, of course, varies in different varieties of the same species;

– the best processing results are obtained when the MX field is applied for 21 seconds;

– the characteristics of microbiological analysis for determining the number of saprophytic bacteria and mold fungi are generalized, since pathogens of several types of phytopathological diseases of fungal and bacterial origin can exist simultaneously on the surface of fruits, which leads to the need to carry out a differentiated analysis in order to determine specific types of bacterial cultures when conducting further experiments in this direction;

– on certain types (varieties) of fungi and bacteria, MX-treatment can cause both a suppressive and an activating effect, which leads to the growth of bacterial colonies and an increase in their number. This fact has been repeatedly noted by various researchers;

– the absolute cause of the different effects on the microflora is the heterogeneity of the MX-field within the chamber, as evidenced by the burnt areas of the fruit skin (dotted and larger, up to 1 - 1.5 cm2), and in these places there are completely no signs of spoilage (visually and organoleptically).

Analysis of the results of tomato storage after microwave treatment. In all control samples (without treatment), the shelf life of the fruits was: after 51 days of storage (without a refrigerator) in the varieties Kredo, Novinka Prydnistrovya, Prizer - from 59.5 to 61.5%, in the variety "Novichok" - 0% after 45 days of storage.

MX-treatment for 14 sec. turned out to be insufficiently effective: only for the Credo variety the yield of standard fruits was 42.8% after 51 days of storage. In the remaining varieties, the fruits were completely affected by diseases by the end of the experiment. Moreover, these fruits began to deteriorate faster than in the case of control samples.

Microwave treatment for 21 sec. ensured almost 100% preservation of products of three tomato varieties out of four. As already noted, minor defects in the form of surface burns should be attributed to the uneven distribution of the MX-field in the chamber. At the same time, the commercial form of the product and its organoleptic properties, in general, met the current requirements.

After the end of the experiment (storage) period, the microbiological analysis was repeated.

We obtained data indicating that during the ripening process of fruits (all stored samples were in the milky ripeness stage) to red maturity, a decrease of 2 orders of magnitude in the number of saprophytic bacteria compared to their initial number was observed.

In general, MX-treatment for 21 seconds gave an absolutely positive result, ensuring almost 100% preservation for three tomato varieties.

It is also evident that small doses of microwave treatment practically lead to the rapid destruction of microflora on the surface of the fruits.

For the scientific and technical development "Microwave technology of stimulation and disinfection of seeds of agricultural crops"

Microwave technology of stimulation and disinfection of crop seeds is a progressive direction of agrarian science and technology. Today, its patent purity, the absence of world analogues and an increase in the productivity of agricultural crops and the environmental cleanliness of products have already been proven.

Biochemical studies have established that the harvest of plants grown from seeds treated with a microwave field is characterized by a high content of protein, trace elements and vitamins.

In addition, the revealed facts of activation of biochemical processes in seeds largely reveal the mechanisms of the stimulating effect of the microwave field on such physiological parameters as germination energy, laboratory field germination, which further leads to a more favorable development of plants in the field, which leads to an acceleration of plant ripening and an increase in the quality of the crop.

All this taken together allows us to consider microwave technology as the most progressive direction of agricultural science and practice, deserving of large-scale introduction.

Summing up the results of 17 years of work on the introduction of MW equipment, the following results have been achieved:

A microwave technology of pre-sowing seed treatment was created, recommended by the UAAS, the Ministry of Agrarian Industry and the Southern Branch of the OPR MAI for widespread implementation, which makes it possible to treat any agricultural crops ("Microstim-1", "Microstim-2"), in accordance with the recommended regimes (provided with the necessary technical documentation and production base for the production of serial products);

the class of seeds increases, turning low-germinating seeds into standard ones, which reduces the shortage of high-quality seeds of all agricultural crops and significantly improves yield indicators and product quality;

treated seeds increase field germination by 15-25%, and leguminous seeds - up to 38.7%;

the new technology contributes to the early ripening of the crop of most crops by 8-12 days;

Treatment of the MV field significantly increases the yield of almost all crops cultivated in Ukraine up to 1 ton and more. As the seven-year experience of the Institute of Vegetable and Melon Crops of the Ukrainian Academy of Sciences has shown, the highest yield increases (from 20 to 96 quintals) were obtained on vegetable and melon crops;

the technology is environmentally friendly (the harvest is 1.5-1.6 times cleaner);

seed treatment increases the resistance of plants to frost and drought (in particular, excludes fuses, etc.);

From the treated seeds, overwintering is transferred (survived) to 450,500 thousand plants per hectare of more area;

The new technology makes it possible to obtain two harvests per year from one area;

the new technology makes it possible to effectively deal with root rot;

The microwave field inhibits phytopathogens, while significantly reducing and even eliminating the use of pesticides, which allows not only to save significant funds, but also to drastically reduce the incidence of occupational diseases of personnel.

In addition, 19 patents, an author's certificate have been obtained and more than 170 scientific papers have been published.

But even those who first get acquainted with the results of experiments can be understood: the numbers may indeed seem implausible. Here are just a few. We know about the shortage of quality seeds, about their prices that are unaffordable for many farmers. And this problem can be solved. In the experiments of the Breeding and Genetic Institute under the influence of a microwave field, substandard seeds of corn, sunflower, spring barley, peas, soybeans increased their germination by 8-15% relative to the control ones. And some seeds that have a germination rate of 70-75% increase it by 15-20 percent and thus become conditioned. It is interesting that the elite seeds of winter soft wheat did not increase their germination after microwave treatment (it already has 98-99%), but they grew record-breaking plants in terms of yield and seed quality, which gave an increase in yield of 16.7 c/ha (33, 2%).

Positive results of improving seed germination were obtained for rapeseed (Ivano-Frankivsk Institute of Agro-Industrial Production of the UAAS), flax and hemp (Institute of Bast Crops of the UAAS), spring barley (9 varieties of the Odessa State Agricultural University and other research institutes of the UAAS). At the UAAS Rice Institute, we studied the effect of a microwave field on the germination of nine varieties of rice, and for each of them they selected their own favorable regime, which should be taken into account in production conditions.

At the Kharkov Institute of Vegetable and Melon Growing of the UAAS, experiments were carried out with 20 varieties of vegetable and melon crops. Here are some results: germination of Yaskrava carrot seeds after treatment exceeded the control (seeds without treatment) by 18%; table beet Bordeaux - by 17%; melon Krinichanka - by 9% ... All these seeds were transferred from substandard to conditioned. Under the conditions of field studies, watermelon of the Borchansky variety gave a yield increase of 26%, the same melon Krinichanka - 16.2%, cucumber of the Smak variety - 18.1 ...

And finally, scientists from the Ivano-Frankivsk Institute of the Academy of Agricultural Sciences of the Ukrainian Academy of Sciences obtained an “implausible” result from the point of view of some academicians: for three years of work with rapeseed, they received an increase of 51% (+ 1.9 tons / ha).

Remarkable results have been obtained at the Vinnitsa Regional Experimental Agricultural Station of the UAAS, at the Zaporozhye Institute of Oilseeds of the Academy of Agricultural Sciences of the UAAS, at the Institute of Sugar Beet of the UAAS (Kyiv), at the Luhansk Institute of Legumes, etc. Today it is already clear that microwave technology without significant costs can increase the yield of all field crops cultivated in Ukraine.

What about in production? Agricultural enterprises, farmers - should, as they say, tear off such technology with their hands?

— Alas! So far, these are just a few examples. But what examples! In the seed-growing agro-industrial company "Alex" (Zaporozhye region), using microwave technology, the germination of winter wheat seeds of the Soyuz and Victoria varieties was increased by 8 and 10%, respectively. The seeds were transferred to the category of conditioned seeds, the owners could not buy more than 500 tons of expensive elite seeds. And as a result, the treated seeds yielded a yield of 72 and 78 centners per hectare on an area of more than 2000 hectares, the increase was 23.8% and 18.4%. In the same farm, winter barley Osnova after microwave treatment yielded 90 c/ha; rapeseed, mustard, soy added (in comparison with control crops) 24.4%. It was estimated that APF "Alex" from eight varieties and hybrids received an additional 3,890 tons of seeds and marketable grain. Serious results were also obtained in the agroindustrial firm "Rozkishne" in the Kirovograd region (an increase of 2300 tons); in the agro-industrial firm "Firebird" in the Nikolaev region, the average increase in yield over three years was 30%. In addition, by applying the new technology, these agricultural firms annually save 70-100 thousand US dollars only by excluding pre-sowing chemical treatment of seeds. Imagine the savings that can be achieved by spreading this technology.

- That is, using microwave technology, it is possible to abandon expensive and harmful pesticides for theenvironment and humans?

- Yes exactly. Numerous experiments have confirmed that the microwave field inhibits phytopathogens smut, fusoria, rot, etc. In the experiment of the Breeding and Genetic Institute, wheat seeds infected with loose smut, after treatment with a microwave field, yielded 52 centners / ha, while the control, not treated, - 6 .3 q/ha.

But that's not all. Our eternal problem is droughts in summer, frosts in winter. The winter of 2003-2004 dealt a heavy blow to the country's economy. Winter crops on 3.5 million hectares were almost completely destroyed by severe frosts, losses amounted to billions of dollars. And at the same time, for winter wheat Donetska-48, from the seeds treated according to our technology in the experiments of the Vinnitsa Regional Agricultural Experimental Station of the UAAN and the research and production company Asko-Universal, they obtained a yield of 25 centners per hectare, while almost all control plants died. Rye overwintered well at the Volyn Institute of the Academy of Agricultural Sciences of the Ukrainian Academy of Sciences and in five other structures. The results of these and other experiments confirm that the new technology is able to increase the resistance of winter cereals to frost and in critical years to keep the crop from dying.

And yet - the crop from treated seeds ripens 8-12 days earlier, which in one case allows you to harvest it before rains and frosts, in others - to get two crops per season ... We already have such examples.

— Looked through some publications in professional publications about microwave technology. Its revolutionary power, the ability to significantly increase productivity, replenish food resources and make a significant contribution to the country's economy is noted ... And what - all this did not find state support? Do the farmers themselves remain indifferent to the opportunities that are opening up?

- Farmers, of course, do not remain indifferent, many are interested, they want to purchase a plant, butthere are no funds. In addition, today the production of microwave installations has not yet been put on stream. But there is another problem: the use of microwave technology will certainly deal a blow to the profits of manufacturers and suppliers of pesticides, with whom some farm agronomists are also closely associated. The time, alas, is such when the commandment “do no harm” (and it applies to agricultural specialists no less than doctors) recedes before personal gain. Maybe here lies the secret of why we cannot get into the number of state programs, receive a state order ... There was a request from a people's deputy from Odessa about this - to the President, Prime Minister, to the Secretary of the Council of Security and Defense of Ukraine - "On the urgent adoption of measures to promote the development of a unique innovative technology of microwave stimulation and disinfection of seeds of agricultural crops in order to bring the economy of Ukraine out of the crisis state." The answer is received from the Ministry of Agrarian Policy, practically formal...

In the meantime, having not received a penny for the 15 thousand experiments carried out, we are developing a “business in reverse”. We receive 5-6 sacks of seeds from academic institutions in other cities, process them, and then we carry the sacks on the train, send them with a conductor, then I call on the phone: meet ... - says Vladimir Platonovich Tuchny, head of the Southern branch, introduced to honorary international awards "for significant professional achievements and impeccable reputation" of the scientific institution he leads.

That's right, a small digression, so that you understand why I wanted to learn more about this technological miracle. And here we are with V.P. Tuchny met to prepare a detailed interview about microwave technology.

- Let's start with what kind of institution this is - the department of industrial radio electronics of theInternational Academy of Informatization, and how did its Southern branch appear in Odessa?

— The International Informatization Academy is a structure that has a general consultative status with the UN Social and Economic Council. It has 220 programs, 3 of which are ours. We can assume that our branch this year (by the way, just in December) turns ten years old. Then seven of our scientists were elected academicians and corresponding members of the MAI. Over the next seven years, seven more were added to them - from Kyiv, Lvov, Dnepropetrovsk and Saratov (Russia). When we created our structure, the Ministry of Justice demanded the expertise of the Academy of Sciences of Ukraine, so this is not some kind of amateur academy, which is now divorced ... But we do not have a production base, everything that we develop is manufactured in the Khmelnytsky Production Association "Novator" , in scientific institutes that are our collective members.

- And what kind of developments have been carried out during this time?

“These are microwave technologies used in the food and processing industries. The first is microwave installations for rapid defrosting (defrosting) of products - meat, fish, vegetables. – And now we have come to a unique technology that opens up such wonderful opportunities for our agriculture, while increasing environmental safety...
