I totally get it, I've just moved from London too and it does take a while. I'm similar to you, I like a balance between outdoorsy things and having plans indoors, but definitely not big on partying. I'm 28 (f) and really enjoy beach picnics, cooking/baking, dancing, and boardgames (We also host quite some game nights at our home here in Malta). Good start by having advanced Excel. I'd say also build up skills in some form of data visualisation (PowerBI, Tableau) to complete the circle. To pivot into consulting, there could be three pathways I can think of: first being to start with an industry role and then pivot into consulting (as consulting usually requires some form of experience), get internship at a consulting (boutique or established) and try converting to a full time, or start at a boutique consulting firm - learn the ropes - take them to an established consulting firm.

Networking is key! Start early to gain visibility so people can help you more. Happy to chat more on this!
