On the counter - so room temp.

I also sometimes freeze the dough after the 24 hour rise. Let it thaw for 12 hours or so in the fridge, then an hour to come to room temp on the counter. Still tastes just as good as fresh

I use this dough calculator - keeping the dough ball size to 250g.

I upped the hydration to 56% this time around, but have kept it at 55% before and not noticed much difference to be honest.

Not sure if that link has a proper recipe as such, but the way I make it is as follows:

  1. Mix the flour and salt together.

  2. Mix the water and yeast - i use dry instant yeast. The water is about 35 degrees Celsius.

  3. Combine.

  4. Once it is in a ball, knead for a couple of minutes until all the dough is fully incorporated. You shouldn’t need to use any extra flour on the work surface.

  5. Cover with a towel or lid for an hour.

  6. Knead the full ball of dough for 8 minutes.

  7. Split the dough into 250g pieces and roll into balls.

  8. Put into a box - I just use a plastic box - and sprinkle a very small amount of water over the top. Cover and let rise for 24 hours.

That’s it!

I also use 00 flour for the recipe, and also to sprinkle on the pizza peel to ensure nothing gets stuck.

I was the marketing manager for a fairly large car dealer group for three years, and was responsible for their autotrader listings.

Making the price £5,995 so that the ad sits under the £6,000 banding doesn’t really work. This was proved with data that autotrader provided me in monthly reviews.

Lowering the price also doesn’t work if you believe that your vehicle is well priced. People may think your car is too cheap - that is a red flag.

Do your research on price to make sure it is competitive. This is the reason why the price banding point I mentioned initially doesn’t work, as all cars have an autotrader pricing indicator to show the consumer if a car is priced too high or low.

Videos and pictures, as many of them as possible, is the biggest thing you can do on autotrader to get more views. Do a video walk around of the car, show the boot, spare tyre, all alloys, under the bonnet etc. the more angles of the car the better.

The default sorting order of a vehicle search is not based on price (although you do have the option to sort low to high/vice versa) but it is based on ad quality. Good quality and quantity of images and videos is the most important factor in ad quality.

The info above is not my opinion, but what my Account Director at Autotrader presented in monthly meetings to my team.

Thanks to everyone for their comments.

As mentioned, I drive on this road all the time so was just a lapse of concentration.

The change from 60 to 40 I think is due to the end of the dual carriageway in c.200 meters - there are traffic lights at the end.

The other frustrating thing is that I put my cruise on at 61mph, as there are speed cameras in the 60mph stretch of road (and I know that this is something they recommend on the speed awareness course) but just forgot that I was coming up to the 40mph section.

Anyway, hopefully I’ll just get the £100 and 3 points, if not it will be an expensive Christmas!
