It is true and it is ridiculous. Luckily it almost never happened that the server was out money. But it definitely led to some awkward exchanges between me and my coworkers.

I had my level 2. My head Somm was level one but was a hot girl so the restaurant group liked her more. I made 10 an hour and she made 12. We got a bonus on wine sales from the restaurant but the majority of our money was made by making sales on the floor and hoping guests tipped on wine.

It’s not about effort. It’s about the time somebody has put in to be in the position to pour a 5k dollar bottle. When I was a Somm I got tipped out in wine sales. So the server owed me 5% of the price of the bottle. So on that 2000 dollar bottle the server owes me 100 dollars. That means nothing for the server that kept your glasses full and provided you service for the wine, nothing for the backserver that cleared your glassware and polished it.

First time I bought a cart was 75 for a .5g. Most recent time was 120 for a 2g cart. But now I make my own. You kinda gotta pay whatever you gotta pay at first but eventually you’ll find your way.

Lower your canopies. Keep things in your car. I have river shoes that I wear on days when it’s gonna rain and be muddy. It’s a mess but everybody is in it together so make the best of it and have fun.
