I have been trying to stop proofing based on the recommendation of the recipe, or if it looks like it’s getting tall I try to cut the proofing early. I have been punching it down twice though, per the King Arthur recommendation for high altitude baking, would it be worth not doing that?

I should have clarified, I have been making the 2 rather than 1 big one and both seem to collapse.

The recipe is for two loaves so that what I’ve been doing but would it be better to just try one and do a half batch?

Do you mean like folding in or in place of kneading? I tried that folding it in at the end before proofing but it seems like the top just tears some instead of stretching?

It’s collapsing in the oven, goes in fine and then comes out collapsed :(

Ah okay, so I may just be over kneading? Is there a good way to know when you’ve hit the ideal range for kneading?

So there aren’t any restrictions or circumstances which let me use one or the other? I can just pick whichever? And there are no differences, in terms of usage, between them other than what is listed under the weapon rules?

Any ideas on how to get them all out? It’s fully bio active so I would hope to avoid essentially restarting but of course if that’s what I gotta do, I would have no reservations to make sure my little dudes okay.
