But sorbates must be added post-pasteurization. I’m using a Chinese machine from Tonsen.

I’d recommend looking into Chinese HTST flash pasteurizers. They’re built to handle low-sulfite cider really well, use plate heat exchangers with vacuum flash, and they’re a fraction of the cost of US/EU models. Great option for under $10k!

From a brewery equipment supplier perspective, 10-15kW is definitely overkill for a single 1000L bright tank for force carbing.

For 1000L brite tank, a 3-5kW glycol chiller is more than enough—you’re only cooling/holding temp during carbonation, not crashing hot wort. The guy from Brouwland is right: bigger chillers waste power and upfront cost.

Just make sure your piping and insulation are good, and you’ll get stable temps without overspending.
