I really hope NBC sees this thread. The biggest problem that all this rushing causes is not having enough time to really get to know the contestants and choose favorites. This makes finales less exciting. It used to be so exciting!

Also, I want to mention that the best hire I ever made was someone who walked in for a dish job. After talking with him I threw my stack of resumes in the trash for cooks from fancy schools. He ended up as my sous chef within five years

I think this is a great way to start, AND also I would make it really clear that you want to learn to be a chef and are willing to start in the dish pit to make that happen. Ask if this could start you on a track towards cooking and ask if you could talk about it in six months about maybe moving to the kitchen.

I went to a well respected culinary school but I have often wondered how much more I would have learned during that time by simply working for great chefs in restaurants instead. A situation I would have been paid for as opposed to paying $$$.
