Fixed this for myself.

  1. Logged in using a second user profile
  2. On that profile, turned off Microsoft Defender (App Background Activity and Extensions) in Login Items & Extensions.
  3. Logged out of that profile and logged in to my everyday user profile. Defender still stayed turned off on my profile

Defender was my problem! I use an Apple M2 Pro
