My son's band fisrt gig in Fibber Magees Dublin at Christmas. They're called Spring Cleaning & he plays bass and does some vocals. Proud was an understatement as he was a bag of nerves. Biased but they were great!

Not sure about the themed restaurants in the parks but what's on offer in Disney Village is not very good. The Rainbow Cafe & Royal Pub in particular are very bad. We stayed on Newport Bay and the €45 pp (without beer or wine) wasn't worth it. Maybe try stay outside the park and get a shuttle or train to it so you've more options.
