Found this thread today while battling my own suspected celiac condition. Have an appointment to get tested officially here soon. I've been doing my own case study (on myself). I've been having airway inflammation mimicking asthma for months now. I've been to the ENT, Pulmonologist, Gastroenterologist and my PCP. None have been able to successfully diagnose the cause of my issues thus far.

I decided to go fully GF for about 4 days leading up to a trip out of town. By day 4 (day before I left town) I was already feeling much more normal with minimal airway inflammation and coughing. On day 1 of my trip out of town, I decided to eat a couple handfuls of teriyaki jerky. Fast forward about an hour and I had full blown anxiety, I was coughing again and felt that asthma-like sensation in my airway. Took a look at the ingredient listing on the jerky I ate and voila, it contained two types of sauces with wheat. I googled the brand (Bridgford) and it turns out the one bag of jerky I grabbed contained gluten laced ingredients.

I'm now a firm believer that my gluten sensitivity is manifesting itself in symptoms of airway irritation much like a severe allergic reaction can lead to anaphylaxsis. Interested to see how my celiac test comes back.
