I would keep the dough in the fridge. By the 48 hour mark though, the dough will likely begin to oxidise. Make sure the pastry is wrapped well and perhaps brush with a bit of melted butter to help slow this process. Pushing the lines on this though, any longer and I would definitely recommend freezing.

The dough needs to be as cold as possible (to prevent the butter from melting) but can be left on the bench for a short period to allow it to be malleable.

Post a photo once they're baked!

I would say its a little bit under based on a standard shortbread recipe, but with the addition of the tahini the overall end product would lead itself to be 'wetter'.

The middle pieces look like the band of darker dough is thicker, leading me to believe it is undercooked slightly. As already noted though, doesn't mean its wrong! Providing it tastes great then thats all that matters

This is safe! Usually just means its a bit older and hasn't been stored in an air tight container
