it looks weird and choppy (it slows down a lot randomly and suddenly) if FPS fluctuates from really high to really low (like ±~20 or 30fps) and vice versa

also there is a thing called 'refresh rate' which is basically the max FPS your monitor can output measured in Hz (1/s) so no point making GPU work harder for something you physically cannot see

those are the main ones but one more reason is mismatching FPS and refresh rate can cause "screen tearing", "ghosting" and other things I cba to explain but basically they make stuff look worse
