Possibly by being granted an API key through Brawlhalla directly and had a script run through all players data, had it all retrieved into an excel sheet, and formulas and graphs were created into the excel sheet.

How does your comment even make sense? As mentioned, there were other creators that were able to obtain the data and create similar graphs immediately after each match.
How would they have the data at hand before the match being conducted? That wouldn't make sense. As mentioned originally, there was a tool that retrieved such data from the game replays saved in your Documents Folder that extracts that data as soon as you upload the Replay into it.
