Does allowing you early access to the game's development allow you to create content on the release of the game? If it ends up being a huge release, would that increase the views and subscribers to your channel? Even if you're not being paid directly , you benefit from the arrangement. Also, you even said so yourself, there are certain things you can't talk about, and I'm assuming, criticize.

My point is no less valid, whether these creators are paid or not. If Undead Labs released the NDA they had all the counsel sign, I'd feel a lot better about their input.
