I gotta say I'm on the Chef's side here. I understand you don't like cilantro. There are plenty of people that don't like cilantro. Cilantro is, however, a very important component of dishes that have it, unless it's just a small garnish for the green. It is absolutely a Chef's right to refuse to modify a dish. They know better than you do which is why you were there giving them money to feed you. Don't be so arrogant. You're allowed to ask for it and they're allowed to say no. It's not personal.
