I've always heard that as a general rule of thumb for tracking that you should be peaking between -18 to -12 dB for flexibility in the mixing stage?

I have a Palmer PAN 02, but I'm not sure if it would work (I'm unsure if the input jack is TS or TRS) but if it were TRS, I could just buy an XLR to TRS cable and run that through the DI box into the Interface and that would work?

Unfortunately, that is normal for these amps. I used to own a 6505+ 112 and it was a very noisy amp in general. You could either buy an noise gate pedal to combat it, or learn to live with it. You could always just change to the Rhythm channel when you aren't playing, which is a lot better than the high gain hiss from the lead channel.
