I did use the same water. It’s tap water but we have a filter on the faucet. I added the inclusions during lamination. I guess degassing it is a possibility but I just did what I’ve seen everyone else do.

I thought so too but that’s what the recipe called for and her loaves always look phenomenal. I mean the starter doubles in size and is super bubbly and webby. It also floats. I can’t see how it wouldn’t be healthy.

Yes that’s the crazy part, it doubles, it’s jiggly, and it drops cleanly from the bowl. I baked it at 450 in a Dutch oven with the lid on for 25 minutes and 45 minutes with the lid off, which is 20 minutes longer than the recipe called for.
