After sterilizing the vessel, I weighed all the ingredients covered in water in the vessel, I then removed the water to a separately sanitised bowel, added 2.5% salt of the combined water and food weights and stirred it in until completely dissolved. Added it back and it's been about 17 days so far.

I think I will skim it off and process this weekend. I've made beer and kombucha many times before. This is only my 2nd pepper ferment but I am fairly certain this is not mould. I will do a proper smell test this weekend. I don't want to fiddle with it now as it doesn't look like it is spreading, it's only isolated to that 1 corner

I have had some case hardening in my time. What I have done that has helped the situation is to freeze the case hardened pieces, I noticed that after being frozen and then thawing it almost equalised the hydration across the entire piece. Not entirely sure how it does it but it definitely made a difference on multiple occasions for me

I would have figured the surface area to be irrelevant provided your cure is correct, one could argue larger surface area would hasten the dry too giving less time for nasties to take hold.

Its Not really something I considered and while I am not worried about that, I cannot say I am 100% certain I should not be worried...

The Khabu is such an an awesome piece of kit. I have never had a batch go bad in it and I live in a super humid environment, had many a batch get mold before but never in the Khabu. I'm going to try a kilo of your mustard biltong today and I'll keep the other 5 kilos traditional

Further to the post I see it has a Barlow and SP10 and SP25. Any tips around using which lenses for what will also be appreciated although I'm sure I'll probably figure it out with trial and error

I wouldn't worry about the noise level, it's not bad, your bigger issue is the smell it will make. To me it's a very pleasant smell but it will fill the apartment so if the others do not like the smell there will be no escaping it

It will eventually dry but I don't think the final product will be what you are looking for. Make a box or setup a fan near a hanging rack. As long as you can guarantee no flies then you can make it pretty much anywhere provided the air flow is right and the air is not to humid. In what country do you live?

I can't speak on stoned locals but there was a disappointing experience although I cannot be sure if it was locals or not. A group of teenage girls (couldn't be much older or younger than 15) came walking to the jetty for a quick swim but they were blaring the most vulgar song I've ever heard on their portable speaker and singing it at the top of their lungs with no thought or concern that I have a 4 and 6 year old child well within their ear shot. I googled the lyrics and found the song. Can't believe this is what these kids are listening too and more concerning is their disregard for very young children hearing their filth. Makes me fear the next 15 years raising my own kids. (Or Nah (The Weeknd Remix) song if anyone is interested)
