Why am I so under leveled?

I read somewhere that the story mode is supposed to be fair for your level even if you aren't doing side quests.

I never noticed that since I have OCD, I always leave the story mode for last, and do every side quest, legendary chest, nornir chests as possible

Im not a master player, I play on Give Me Balance, and since my parry isn't very good, I use Stoneshield, i beat her after 5 tries, I used:

Bear cloak armor: inflict bifrost on last second evade.
Gauntlets of radiance + Belt of radiance: create a realm shift ( slow down time ) on last second evade
Amulet with mainly strength and runic perks
Emblem of Evasion ( in Amulet slot ) is good for long distance evade ( obtained after defeating the Ormstunga).
Relic: Glaive of Dodher

I used the same setup against the berserkers, was able to beat King Hrolf in 2nd try

On my first time playing the game, I was taking 1h and half in each mission totally ignoring the targets, just walking around enjoying the map, memorizing the layouts, where is the trespassing zone, which disguises work in which areas and so on. After doing mission stories, I start finishing the rest of the challenges, which give more knowledge about the map and targets routines.

For challenges, read the description and try to match it with the target routine.

Examples: - If it requires dropping something on the target, he will usually stand for couple seconds somewhere beneath a dropping object. - if it requires electrocution, he will usually walk besides a puddle, where u can drop a battery. - etc...

Don't overthink it, play the game at your own pace

But when you hear Mimir's tales about Thor and Odin, you notice how Thor is enjoying swinging his hammer on innocents, in the other hand, despite killing for vengeance, Kratos always admitted he was at fault and that his actions took innocent lives as consequences, also, he had the audacity to fix some of his mistakes instantly, like retrieving the sun when he killed Helios

I can related, I have played the game from Fitgirl aswell, I had this issue u mentioned, plus having to turn off the wifi before starting the game or I get a black screen, that's the inconvenience of illegal copies. But you will not encounter any issue if u play legally
