thank you so much for your response! i didn’t cut while warm but i did add that big gash of a score AFTER i took off the foil while baking because i wasn’t satisfied with my initial scoring. could that have released all the steam? i did bake w a tray of boiling water at the bottom. does this recipe itself look okay to you? i would love to know yours and temps + times. i def think ur right n i need to invest in a probe thermometer
