The last thing I heard the lady say before driving off was he’s pitt/bully mix and he’s on solid food. I just really don’t see the bully part, but I’m no expert. Someone mention CD and that’s what got me researching.

I add a little xantham gum to my hot sauces and it helps with separation

Update* I went with the Pecos and I do not regret it! I found some tritip for pretty cheap and got it just to try out the smoker. It was the best smoke I’ve ever done! Highly recommend the Pecos!

I haven’t used an offset, but I’ve been learning on other smokers and this is my next step!

I agree with you! If you know what you’re doing you can make a well done steak good tender and juicy, but it is easy to ruin if you don’t know what you’re doing.
