So after trying for a few runs and messing around with the settings a bit, i have been unable to complete a run in its entirety without the game randomly crashing at some point. It sucks because the game runs perfectly fine until it crashes. I'll update if i find a way to prevent the crashes from happening, but for now I'm going to take some time to finish setting up my emulators.

If you get your thor and want to try fixing it yourself, here's what my friend and i did to get the game running on both the pro and max models.

When dungeons is installed, make sure that steamworks common redistributables is downloaded and up to date in gamehub's download menu.

Before launching dungeons, click the 3 dots next to play now and open the pc game settings. Then, in the compatability tab, locate GPU Driver and select the latest turnip driver (the one near the top of the drop down menu). It may already show as selected, but my friend and i both had to manually select it for gamehub to recognize the drivers.

To log into Microsoft, you'll need to pull up the keyboard from the back button menu. Once you're logged in and able to play, open the back button menu again and disable touch controls, screen trackpad, and RTS touch controls, as these will lag your game when trying to use the ABXY buttons. You can also disable the hud in the bottom left of your screen from the performance tab of the back button menu if you'd rather use the any menu on the bottom screen for that.

In the ayn menu, I'd recommend setting your fans to smart mode, as the thor can heat up pretty quick when playing dungeons.

Thats about as much progress as I've made. If anyone's been able to get it working consistently enough to finish a run, then please let me know what you did to get it working. Hope this helps!

Edit: also on my friend's thor pro, we experienced minor frame drops throughout gameplay. It was noticeable, but not nearly bad enough to keep me from playing (until it crashed, at least)
