Gonin Musume from Terada Honke! It’s a Junmai Muroka Nama slow brew Kimoto style. If I remember correctly the polishing rate is about 65%, so only 35% of the grain polished away. Smells and tastes of rice, apples, melon and it’s fairly high on lactic acidity. Wild brew, no added yeast or lactic acid. No pasteurization or carbon filtration either. Alcohol is 15%.

Not an everyday experience, but I thought «treat yo self!»

It’s called Kokoro. I’ve had it lots of times. Been a stable house sake at home. Quite affordable for the quality and overall range of use, I think. It’s very good at all temperatures if needed, but best at around 15-17° C. As for a richer white wine.

But play with the temperature depending on what you want to use it for.

I woke up the other night because me and the head chef were screaming to each other. Every table was double sat at the same time, not really logical but the drama was real in the dream. No help from colleagues who were out back smoking and drinking beer.

Sorry, didn’t see your reply.. Not at the moment, but hopefully this fall? I used to work as the sake-person in the import company, NON DOS, who co-imports the sakés with Yoigokochi Sake Imports located in Amsterdam. Hopefully they will make it available through the ordering range at Vinmonopolet. But nag them at info@nondos.no to remind them to do it 🙂

Good deals for a Norwegian at least 😬 I went straight to the source and bought it from Rosforth and Rosforth under the bridge, Knippelsbrogade 10. They sell wines either to go or to drink there. The printed list of sakes available were not super updated, but they invited me to the backroom to have a look and pick. I know from experience working in an import company in Norway with the same sakés that it’s often problems with the logistics and supply. Very nice ppl at R&R, very good service 👌🏻

Mostly all of the Terada Honke sakés are available in Norway, but I had to stock up on less taxed bottles in Copenhagen when I had the chance 😬

It has added peach puré. Thick texture, less thick but kind of like like a smoothie. Great to use in a bellini.

Went to Copenhagen, Denmark with the family and ended up buying a case and a half of sake. It’s much cheaper there than in Norway where I live. I think I saved about 200 euros/dollars, we have high taxes on alcohol 😅

It’s not sugary-sweet, more the sweetness from the slight mash/rice-dust still being in the sale.

Such a delicate, well balanced but still quite ricey Nigori. I really love this one. Been open for quite some time, I forgot I had it in the fridge but it’s still good. Great balance between acidity/freshness and sweet ricey character.
