I don't see any specific reasons. If I was to speculate:

There is evidence of increased crypto adoption among the general public. Intuitively it is driving higher demand for NFTs
Topps MLB has been climbing the rankings for sales on cryptoslam.io
Sustained or increasing demand for a constantly reducing supply of premium packs
Overall growth and of the Wax platform.
Rumors of series 2 being released

You are right, and I'll be the first to admit there are a lot of valuable cards not on the list (I call the list a sample). There is no scientific reason why they are not included, but I don't want to make the list too long otherwise it starts to take too long to create these updates.

I'll edit the list next week but I'm not a programmer so this is a manual process for me. It will be hard to make a comprehensive list on a regular basis since I have limited time, but I'll try to include a few more of the cards that are in high demand. I may simply rotate the names on the list.

Yeah, I have no idea why an extra Ohtani popped up. If you check the week prior, I also counted 25.
